Vegan Brown Rice Sushi

Since I moved to Montreal, I’ve fallen in love with sushi.  Ever looking for a new challenge, I decided I would try to make my own.  Here’s the step-by-step process in pictures:

Setting out my ingredients — pre-cooked sweet potato, mango, julienned carrots, zucchini, sticky brown rice (with sweet brown rice vinegar), and my sushi mat.

My sticky rice and my tofu “steaks” — tofu marinated in tamari sauce, garlic powder and coriander, and baked with a wheat germ and nutritional yeast coating.

The uncooked rice — Lundberg brown rice which I bought at the health food store.

I wrapped the sushi mat in plastic wrap (which ended being a saving grace!), and then I spread the rice on the yaki sushi nori seaweed (smooth side down).
