Zucchini Carob Loaf

In the words of my mother, I wanted “something nice to eat.”  So I searched my cookbooks for that “something nice” and baked this:


It was super yummy and was a great way to get more veggies in my diet.  Here’s the recipe (taken from the God’s Plan Natural Foods Cookbook by M.E.E.T. Ministry):

2 ½ cup whole wheat pastry flour

2/3 cup honey

½ tsp coriander

½ cup and 2 tbsp oil

½ cup soy margarine

2 cup zucchini shredded

2 tsp non-aluminum baking powder

1/3 cup carob powder

¼ tsp salt

½ cup soy milk

1 tsp vanilla

¼ cup coffee substitute (optional)

Grease and flour 13 x 9 x 2 inch pan.  Mix together flour, honey, carob, baking powder, coriander and salt.  Add oil, milk, honey, margarine and vanilla.  Beat with electric mixer on low speed until combined.  Add zucchini and beat on high 2 minutes.  Spread batter into lightly oiled “Pammed” pan.  Bake at 350 degrees for 35 minutes or till cake tests done.
